Super Easy Tomato and Coconut Pasta Recipe (Vegan!)

This is honestly my favourite lazy meal at the moment (after veggie burgers, of course).

What you'll need:

  • Two pots (one for pasta, one for sauce)
  • A good sharp knife
  • Coconut oil
  • Coconut milk
  • Mushrooms
  • 1 white onion
  • 1 garlic clove
  • 1 tin of plum tomatoes
  • 1 tin of herbed tomatoes
  • A sprinkle of salt
  • Seasoning if you want
  • You can also add things like red/yellow pepper if you so choose, I don't like it too chunky though


Pick some pasta. Cool shapes like stars or smiley faces are the best (don't deny it, funky shaped pasta is far tastier than boring penne or spaghetti!). I like using this awesome stuff that looks like octopus legs :) Cook the pasta as you would normally, with a bit of salt.
Meanwhile, pick a nice white onion, 3 good sized mushrooms (the ones that are roughly 2 inches across), and a garlic clove. Cut the garlic and onion finely and cut up the mushrooms however you like them best (diced, sliced, whatever). Heat some coconut oil in a pan and throw the garlic and onion in when the oil is nice 'n' hot. After a couple of minutes, toss the mushrooms in.
When these are cooked, add a tin of plum tomatoes and a tin of herbed tomatoes. If you want it even more tomatoey, cut some fresh organic toms up and throw those in, too! Add black pepper or any other seasoning you fancy. Heat everything through really thoroughly, and then add a blob of coconut milk. The amount of coconut milk you add is entirely up to you depending on how creamy you like your sauce.

And that is it! It's sooo tasty and makes about 8 servings. It also gets the thumbs up from my meat-eating cheese fiend partner, who naturally grates cheese on top.
